Stuffed Calamari

Ingredients
  

  • 1/2 cup cooked sticky rice
  • 1/2 Chinese sausage, diced
  • 200g minced pork
  • 10 calamari, I used small calamari

Marinade

  • 1 tbsp soy sauce
  • 2 tsp cooking wine
  • 1 tsp sugar

Teriyaki Sauce

  • 2 tbsp soy sauce
  • 3 tbsp sake
  • 1 tbsp mirin
  • 2 tsp sugar
  • 2 tbsp water

Instructions
 

  • Marinate minced pork for 20 minutes.  Chop tentacles into very small pieces.
  • Cook pork and chopped tentacles in a pan and then mix with cooked rice.  Season with salt.
  • Stuff the calamari tubes.  Fill the calamari tubes only 70% and close with toothpick.
  • Steam for 10 minutes.  Mix Teriyaki Sauce and set aside. 
  • Drizzle oil into a pan and brown the stuffed calamari.  Add sauce and continue cook for a minute.
