Add shrimps, salt, sugar, sesame oil, pepper, cornstarch, grated ginger, egg white and green onion to a food processor. Pulse until finely minced.
Spread mixture among the white bread. Sprinkle with sesame seeds. Cut into the shape you want.
Heat oil in a small stockpot to 350°F. Place shrimp toast with the shrimp pasta side down. Fry until golden brown. Turn them over and fry the other side. Transfer to paper towel to drain.
