Roasted Bone Marrow

Ingredients
  

  • 2 beef bones with marrow
  • 2 tsp brown sugar
  • 1 tbsp lemon juice
  • 1 sprig mint, thinly chopped
  • salt
  • pepper

Instructions
 

  • Preheat oven to 450°F
  • Place bones, cut side up on a baking sheet.  Roast for 20 to 25 minutes.
  • Sprinkle with brown sugar, use a culinary torch to caramelize sugar on the bone marrows.  Season with salt and pepper.  Squeeze lemon juice on top of the bone marrow.  Garnish with chopped mint leaves.
