Prime Rib Hash

Ingredients
  

  • 2 cups leftover prime rib, sliced
  • 2 cups or more leftover diced potato
  • 1 onion, cut in chunks
  • 2 cloves garlic, minced
  • 1 red bell pepper, cut in chunks
  • 1 sprigs thyme
  • 1/2 cup mozzarella cheese
  • 1/2 cup arugula
  • Green Onion for garnish

Sauce

  • 1/3 cup Mayonnaise
  • 2 tbsp ketchup
  • 1/3 cup cream
  • 1/3 cup leftover Au Jus
  • Salt and pepper to taste

Instructions
 

  • In a large skillet, add olive oil and brown prime rib.  Remove and set it aside.
  • Add onion, garlic, bell pepper and potato until they are cooked.
  • Add in the prime rib.
  • Mix sauce and sprinkle over the skillet.  Add mozzarella cheese and mix well.
  •  Put arugula on top and garnish with green onion.
