Roll out the puff pastry and put it on top of the baking sheet with parchment paper. Sprinkle with lots of sugar.
Flip the dough over. Brush with butter and sprinkle more sugar on top.
Fold the sides of the pastry towards the center in quarters. Fold them again so the two folds meet at the middle of the dough.
Slice the dough into strips of about half an inch. Separate the two folds. Brush with melted butter. Sprinkle more sugar on top.
Refrigerate for 30 minutes
Preheat oven to 400°F and bake for 20 minutes, then turn over and bake for another 10 minutes or until the sugar has caramelized.
