Marinate chicken with ginger, soy sauce and sugar.
Drizzle oil into a pan, brown chicken and then add broth (hondashi, water, soy sauce, sugar and mirin). Bring it to boil and cook for couple minutes. Divide into 6 to 8 portions.
Beat eggs. Add one portion of chicken mixture into a pan and bring it to boil. Add one egg and green onion. When the egg has set, you can slip the mixture over the rice.
