To make the cheesecake crust, preheat the oven to 400°F
Combine crumbs and butter, press firmly onto bottom of 7-inch springform pan. Bake for 10 minutes. Let it cool completely.
Reduce the oven temperature to 300°F
To make the filling, beat cream cheese, sugar, and vanilla extract until smooth. Add the beaten eggs slowly until combined. Add the flour, lemon zest and lemon juice.
Brush butter on the sides of the pan and pour filling into crust. Shake it until it is flat and let it rest for 30 minutes.
Bake for 35 minutes or until centre is almost set. Cool completely, refrigerate 4 hours or overnight.
