Bring a pot of water to boil, add the noodles, cover, and turn off the heat, let it soak for few minutes or until the noodles are soft. Drain and rinse with cold water. Set it aside.
In a pan, add oil and stir fry bean sprouts for couple minutes. Then add shallot and green onion and cook for another two minutes. Set them on a plate for later.
In a bowl, mix soy sauce, dark soy sauce, sugar, oyster sauce and sesame oil. Set it aside.
Heat pan with oil, Sauté the onion until translucent. Then add the noodles, cook for a few minutes as we want to get the bottom nice and crispy. Then flip and cook for another 3 minutes. Add the sauce a little bit at a time and mix it with the noodles. Toss back the bean sprouts. Garnish with sesame seeds.
