Preheat oven to 400°F
Arrange bacon into a weaving pattern.
Line a square pan with parchment paper. Roll puff pastry into the square pan. Wisk the eggs, cream, ham, cilantro, cheese and hot sauce together. Pour into the puff pastry shell.
Line weaved bacon in a baking tray. Bake bacon and puff pastry with eggs for 20 minutes.
Then lift the bacon and put in on top of the eggs. Bake for another 20 minutes or until the center is completely set. Rest for 10 minutes and serve.
