Butterfly the shrimp by slicing from the tail to the front without cutting all the way through. Pat dry with paper towel. Season with salt and pepper.
Coat shrimp with flour, then dip the flour coated shrimp in a beaten egg. Mix panko and unsweetened shredded coconut, transfer the coated shrimp to panko coconut. Press panko into both sides.
Place breaded shrimp in the basket of the air fryer, brush with oil and air fry for 6 minutes. Flip shrimp and cook for another 2 minutes.
For the sauce, use hot water to dissolve the honey, then add mayonnaise and miso. Mix well.
