Sushi Bake

I recently tried to make sushi bake and it is surprisingly easy and delicious.  When the sushi bake is ready, you can scoop a little bit of sushi bake to the nori (seaweed) and it makes a delightful appetizer.

Sushi Bake

Ingredients
  

Rice

  • 4 cups cooked sushi rice (about 2 cups uncooked)
  • 2 tbsp rice seasoning (Furikake)
  • 4 tbsp seasoned rice vinegar 

Crab and Scallop fillings

  • 8 sticks imitation crab, shredded
  • 200g scallops, chopped
  • 2 tsp sriracha
  • ½ cup Japanese mayonnaise
  • ¼ cup cilantro 
  • 1 tbsp lemon juice

Spicy Mayo

  • ½ cup Japanese mayonnaise
  • 1 tbsp sriracha
  • ½ tsp sugar

Nori for serving

Optional

  • Avocado, green onion, sesame, uni, Ikura and etc.

Instructions
 

  • Preheat oven at 425°F.  
  • Mix cooked sushi rice with rice seasoning and seasoned rice vinegar.  Add rice to the bottom of 9 X 9 pan.  Press.
  • Mix crab and scallop fillings with imitation crab, scallops, Japanese mayonnaise, sriracha, cilantro and lemon juice.  Then add all the crab and scallop fillings on top.  
  • Bake for 15 minutes until golden on top.  
  • Drizzle with the spicy mayo and enjoy
