I recently tried to make sushi bake and it is surprisingly easy and delicious. When the sushi bake is ready, you can scoop a little bit of sushi bake to the nori (seaweed) and it makes a delightful appetizer.
Sushi Bake
Ingredients
Rice
- 4 cups cooked sushi rice (about 2 cups uncooked)
- 2 tbsp rice seasoning (Furikake)
- 4 tbsp seasoned rice vinegar
Crab and Scallop fillings
- 8 sticks imitation crab, shredded
- 200g scallops, chopped
- 2 tsp sriracha
- ½ cup Japanese mayonnaise
- ¼ cup cilantro
- 1 tbsp lemon juice
Spicy Mayo
- ½ cup Japanese mayonnaise
- 1 tbsp sriracha
- ½ tsp sugar
Nori for serving
Optional
- Avocado, green onion, sesame, uni, Ikura and etc.
Instructions
- Preheat oven at 425°F.
- Mix cooked sushi rice with rice seasoning and seasoned rice vinegar. Add rice to the bottom of 9 X 9 pan. Press.
- Mix crab and scallop fillings with imitation crab, scallops, Japanese mayonnaise, sriracha, cilantro and lemon juice. Then add all the crab and scallop fillings on top.
- Bake for 15 minutes until golden on top.
- Drizzle with the spicy mayo and enjoy
