I cook so many different dishes that my fridge is always full of leftovers from previous dinners, I’ve been trying to reuse some of those old leftovers and turn them into delicious meals for brunch. This recipe really warms you up with the heavy leftovers and fresh herbs and produce.
Prime Rib Hash
Ingredients
- 2 cups leftover prime rib, sliced
- 2 cups or more leftover diced potato
- 1 onion, cut in chunks
- 2 cloves garlic, minced
- 1 red bell pepper, cut in chunks
- 1 sprigs thyme
- 1/2 cup mozzarella cheese
- 1/2 cup arugula
- Green Onion for garnish
Sauce
- 1/3 cup Mayonnaise
- 2 tbsp ketchup
- 1/3 cup cream
- 1/3 cup leftover Au Jus
- Salt and pepper to taste
Instructions
- In a large skillet, add olive oil and brown prime rib. Remove and set it aside.
- Add onion, garlic, bell pepper and potato until they are cooked.
- Add in the prime rib.
- Mix sauce and sprinkle over the skillet. Add mozzarella cheese and mix well.
- Put arugula on top and garnish with green onion.
