Oyako Don

This is a delicious classic Japanese rice dish.  It consists of a bed of rice topped with chicken and eggs.  It is so good with the broth; my son can eat several bowls.

  

Oyako Don

Ingredients
  

  • 500g boneless chicken thigh, cut into cubes
  • 8 eggs
  • Cooked rice
  • 4 green onions, sliced diagonally

Broth

  • 2 tsp hondashi
  • 2 cups water
  • ½ cup soy sauce
  • ¼ cup sugar
  • ¼ cup mirin

Chicken Marinade

  • 3 pieces of ginger
  • 2 tbsp soy sauce
  • 3 tsp sugar

Instructions
 

  • Marinate chicken with ginger, soy sauce and sugar.
  • Drizzle oil into a pan, brown chicken and then add broth (hondashi, water, soy sauce, sugar and mirin).  Bring it to boil and cook for couple minutes.  Divide into 6 to 8 portions.
  • Beat eggs.   Add one portion of chicken mixture into a pan and bring it to boil.  Add one egg and green onion.  When the egg has set, you can slip the mixture over the rice.
