Oven Baked Salmon Tortilla

Do you have lots of holiday leftovers and don’t know what to do.  This is a super easy way to turn your leftovers into a delicious brunch.

Oven Baked Salmon Tortilla

Ingredients
  

  • 4 Tortilla wraps
  • ½ cup salmon (break apart the salmon)
  • 8 eggs
  • ½ cup red onion, diced
  • 1 tomato, diced
  • ½ cup brie, cubed
  • Salt and pepper

Instructions
 

  • Preheat oven at 350°F.  
  • Brush the non-stick pan with oil, arrange tortilla on the pan.  Add tomato, salmon, red onion, brie and eggs.  Season with salt and pepper.  
  • Bake for 30 to 40 minutes or until the eggs set.
