This tasty cake is an amazing dessert, it combines lemon flavors in a classic cheese cake. A playful twist to a normal dish.
Lemon Cheesecake
Ingredients
Crust
- 1 cup oreo baking crumbs
- 1/4 cup unsalted butter melted
Filling
- 500 grams cream cheese room temperature
- 3/4 cup sugar
- 1 tbsp lemon zest
- 1/2 lemon juiced
- 3 eggs
- 2 tbsp flour
- 1 tbsp vanilla extract
Instructions
- To make the cheesecake crust, preheat the oven to 400°F
- Combine crumbs and butter, press firmly onto bottom of 7-inch springform pan. Bake for 10 minutes. Let it cool completely.
- Reduce the oven temperature to 300°F
- To make the filling, beat cream cheese, sugar, and vanilla extract until smooth. Add the beaten eggs slowly until combined. Add the flour, lemon zest and lemon juice.
- Brush butter on the sides of the pan and pour filling into crust. Shake it until it is flat and let it rest for 30 minutes.
- Bake for 35 minutes or until centre is almost set. Cool completely, refrigerate 4 hours or overnight.
