Lemon Cheesecake

This tasty cake is an amazing dessert, it combines lemon flavors in a classic cheese cake. A playful twist to a normal dish.

Lemon Cheesecake

Ingredients
  

Crust

  • 1 cup oreo baking crumbs
  • 1/4 cup unsalted butter melted

Filling

  • 500 grams cream cheese room temperature
  • 3/4 cup sugar
  • 1 tbsp lemon zest
  • 1/2 lemon juiced
  • 3 eggs
  • 2 tbsp flour
  • 1 tbsp vanilla extract

Instructions
 

  • To make the cheesecake crust, preheat the oven to 400°F
  • Combine crumbs and butter, press firmly onto bottom of 7-inch springform pan.  Bake for 10 minutes. Let it cool completely.
  • Reduce the oven temperature to 300°F
  • To make the filling, beat cream cheese, sugar, and vanilla extract until smooth.  Add the beaten eggs slowly until combined.  Add the flour, lemon zest and lemon juice. 
  • Brush butter on the sides of the pan and pour filling into crust.  Shake it until it is flat and let it rest for 30 minutes.
  • Bake for 35 minutes or until centre is almost set.  Cool completely, refrigerate 4 hours or overnight.
