Huevos Rancheros with Pulled Pork

An amazing breakfast with barbeque and Mexican food flavors. The refried beans and fried tortilla makes it amazing.

Huevos Rancheros with Pulled Pork

Ingredients
  

  • 1/2 can refried bean heated
  • slow smoked pulled pork
  • 4 soft corn tortilla
  • 4 eggs
  • bbq sauce or rhubarb jam
  • salsa

salsa

  • 2 tomatoes diced
  • 3 tbsp red onion thinly chopped
  • 1/2 cup cilantro chopped
  • 2 cloves garlic minced
  • 2 tsp fresh thyme
  • 1/2 lime lime juice
  • 1/2 tsp chilli powder
  • 2 tbsp olive oil
  • salt and pepper

Instructions
 

  • Combine salsa ingredients and set aside
  • Mix pulled pork with rhubarb jam or BBQ sauce
  • Pan fry each tortilla individually until they are crispy.  
  • Spread the refried bean and pulled pork over each tortilla.  
  • Fry two eggs in a small skillet, fry carefully without breaking the yolk.  Place the egg on top of the prepared tortilla.
  • Decorate the plate with salsa.   Dash chipotle on the salsa
