A savory cake with a method of creation like cheesecake. A great dish to share among the family. In this recipe, I am using cooked quinoa instead of breadcrumbs and it creates a nuttier flavor.
Bacon Wrapped Quinoa Meatloaf
Equipment
- 500g ground beef
- 1 ½ cup cooked quinoa
- 2 eggs
- 1 onion, diced
- 2 garlic, minced
- ½ cup ketchup
- ½ BBQ sauce
- 2 tsp salt
- 1 tsp pepper
- 1 tbsp Worcestershire sauce
- 12 strips bacon
Instructions
- Cook quinoa according to the instruction.
- In a pan, cook onion and garlic until aromatic.
- Preheat over to 375°F. Line a parchment paper to the bottom of the springform pan. Line a 7 inches springform pan with bacon
- Mix ground beef, cooked quinoa, eggs, onion, garlic, ketchup, BBQ sauce, salt, pepper, Worcestershire sauce in a bowl.
- Put the meatloaf mixture into the bacon lined springform pan. Press the mixture into the pan.
- Fold overhanging bacon over the top of the springform pan.
- Bake meatloaf for an hour, then remove the outside rim. Increase the oven temperature to 400°F. Bake for another 20 minutes or until the internal temperature reaches 165°F
