Stuffed Calamari

In this recipe, the filling is made with sticky rice and minced pork.  

Tips for you.  

1. Don’t over stuff the calamari since the filling will expand while cooking.

2. Add small holes in the calamari with a toothpick or it will swell.

How to clean calamari

  1. Remove head & tentacles
  2. Remove spine
  3. Remove skin

Stuffed Calamari

Ingredients
  

  • 1/2 cup cooked sticky rice
  • 1/2 Chinese sausage, diced
  • 200g minced pork
  • 10 calamari, I used small calamari

Marinade

  • 1 tbsp soy sauce
  • 2 tsp cooking wine
  • 1 tsp sugar

Teriyaki Sauce

  • 2 tbsp soy sauce
  • 3 tbsp sake
  • 1 tbsp mirin
  • 2 tsp sugar
  • 2 tbsp water

Instructions
 

  • Marinate minced pork for 20 minutes.  Chop tentacles into very small pieces.
  • Cook pork and chopped tentacles in a pan and then mix with cooked rice.  Season with salt.
  • Stuff the calamari tubes.  Fill the calamari tubes only 70% and close with toothpick.
  • Steam for 10 minutes.  Mix Teriyaki Sauce and set aside. 
  • Drizzle oil into a pan and brown the stuffed calamari.  Add sauce and continue cook for a minute.
