Cantonese Soy Sauce Fried Noodles

One of the best Asian noodle dishes is the simple soy sauce Chow Mein. It is a flavorful mix of Chinese sauces and noodles, perfect to prep for lunch or eat for dinner.

Cantonese Soy Sauce Fried Noodles

Ingredients
  

  • 1 package Steamed egg noodle (454g)
  • 200g bean sprouts
  • 100g green onion
  • 1 onion, sliced
  • 1 shallot, thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 1 tsp sugar
  • 1 tbsp oyster sauce
  • ½ tbsp sesame oil
  • Pinch of salt

Instructions
 

  • Bring a pot of water to boil, add the noodles, cover, and turn off the heat, let it soak for few minutes or until the noodles are soft.  Drain and rinse with cold water.  Set it aside.
  • In a pan, add oil and stir fry bean sprouts for couple minutes. Then add shallot and green onion and cook for another two minutes.  Set them on a plate for later.
  • In a bowl, mix soy sauce, dark soy sauce, sugar, oyster sauce and sesame oil.  Set it aside.
  • Heat pan with oil, Sauté the onion until translucent.  Then add the noodles, cook for a few minutes as we want to get the bottom nice and crispy.  Then flip and cook for another 3 minutes.  Add the sauce a little bit at a time and mix it with the noodles.  Toss back the bean sprouts.  Garnish with sesame seeds.
