Seared Garlic Butter Scallops

When I don’t want to cook, I always think about this easy dish.  This is so easy to make and tastes luxurious.  

Ingredients
  

  • 12 bay scallops 
  • 1 tbsp garlic, minced
  • ½ clove shallot, thinly sliced
  • 2 tbsp butter
  • 1 tbsp Dijon mustard
  • 1/3 cup white wine
  • 2 tbsp heavy cream
  • 2 tbsp dill, chopped
  • Salt and pepper to taste
  • Optional: Caviar for garnish

Instructions
 

  • Pat dry the scallops and season with salt and pepper
  • Add oil to a large pan over high heat.  Cook scallops for 2 minutes on each side.
  • Remove scallops
  • Lower the heat to medium-low, add garlic and shallot and cook for 1 minute.
  • Add butter until it is melted; then add wine and cook for 1 minute
  • Add Dijon mustard, heavy cream, and lemon juice, mix well.  Taste sauce and adjust with salt and pepper.
  • Return scallops to the pan.
  • Garnish with dill and caviar.
