Roast Strip Loin

Roast Strip Loin

Ingredients
  

  • I boneless strip loin about 5 lbs
  • 2 tbsp olive oil
  • 4 tsp salt
  • 1 tsp black pepper
  • 8 garlic cloves
  • 2 sprig thyme 
  • 1 sprig rosemary
  • 1 sprig sage

For the sauce

  • 2 tbsp butter
  • 3 shallots, thinly sliced
  • 1 sprig thyme 
  • 2 cup red wine
  • 2 cup beef stock
  • Salt and pepper

Instructions
 

  • Finely Chopped garlic, thyme, rosemary and sage.  Mix with oil, salt and black pepper to form a paste.
  • Pat dry strip loin, rub it with the paste
  • Preheat oven to 450ºF.  Place the strip loin on rack in roasting pan.  Add 2 cups of water.  Roast for 10 minutes.  Fat side up.  Reduce heat to 325ºF and roast until the internal temperate reaches 130ºF.  About 40 to 50 minutes.
  • For the sauce, heat pan with butter, stir in shallots and thyme, cook until fragrant.  Add red wine and bring to simmer.  Add reserve dripping and beef stock.  Reduced until thicken to your liking.  Season with salt and pepper.
