Chicken Crispy Noodles

These crispy noodles remind me of the amazing stir-fry that my mom makes, it’s easy to make like fried rice but noodles instead.

Tips:  I use an individual size egg noodles and it is easier to create a nice round shape.

Chicken Crispy Noodles

Ingredients
  

  • 300g chicken, sliced
  • 2 onion, thinly sliced
  • 1 cup thinly sliced carrot
  • 2 egg noodles (50g each)

Sauce

  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • ½ tsp sugar
  • 1 tbsp chicken broth mix
  • 1.5 cup water
  • 1 tsp sriracha

chicken marinade

  • 1 tbsp soy sauce
  • 2 tsp Chinese cooking wine
  • 1 tsp grated ginger

Cornstarch mixture

  • 3 tbsp water
  • 1 tbsp cornstarch

Instructions
 

  • Deep Fry egg noodles and set it aside.
  • Drizzle oil and cook the onions and carrots for a minute. 
  • Add chicken and cook until the color changes.
  • Add sauce and cornstarch mixture.  Let it simmer for couple minutes or until the sauce has thickened.
  • Serve it on top of the deep-fried noodles.
