Mango Sago With Glass Jelly

Mango Sago is a quick and delicious summer dessert.  This is such a refreshing dessert and is perfect for hot summer days.  

Mango Sago with Glass Jelly

Ingredients
  

  • ½ cup small tapioca
  • 6 cups of water
  • 2 mangos
  • 200 ml coconut milk
  • 200 ml milk
  • 1/2 cup condensed milk
  • 1 can grass jelly, cut into small cubes

Instructions
 

  • Bring 6 cups of water to a boil and add small tapioca.  Simmer for 15 minutes, then cover and let it sit for 20 minutes.  The tapioca should be completely transparent.  Then drain and rinse in cold water.  I also let it soak in cold water keep the tapioca pearls from sticking to each other.
  • Blend mango (remove pit and skin), coconut milk, milk, and condensed milk until smooth.
  • To serve, drain the cooked tapioca, add the grass jelly and mango mixture.  Enjoy!
